Super Super Simple Chocolate Pots

Imagine the scenario: it is 5pm on Valentine's Day. I am in the midst of role as tea time chef to one child, while already en route to donning my chauffeur cap to pick up the other one. Simultaneously I am cooking tonight's dinner for the grown ups and flinging laundry off the clothes line to make way for the next load about to come out of the washing machine. Washing up is piled almost to head height and bedtime is closing in. Suddenly I am struck by the realisation that on this most commercially recognised romantic day of the calendar year, I probably should have made an effort to prepare a romantic meal encompassing a decadent dessert. Oops.

Too late to change the hastily thrown in the oven confit of duck and unadulterated plain pile of green veg but dessert I can salvage, right? Two ingredients is all this took (can of coconut milk and a bar of chocolate) and all of 5 minutes - did you notice the annoying extra 'Super' in the title to emphasis the Simplicity?

It's basically a pared down version of my Anniversary Chocolate Pots. Clearly had I had the luxury of time I would have timed it so that it was prepared in daylight hours for optimum photograph quality and fiddling with pretty adornments but this is real life as I know it.

Some closing words of romantic wisdom from two much admired creative souls: Firstly, Charles Schulz: "All you need is love. But a little chocolate now and then doesn't hurt;" and secondly, my childhood favourite Roald Dahl: "It doesn't matter who you are or what you look like, so long as somebody loves you." And I really loved this dessert :)

Super Super Simple Chocolate Pots
Grain-free, Gluten-free, Dairy-free, Nut-free

Serves 2

Ingredients:
1 cup coconut cream (solid part from top of a can of coconut milk)
75g high cocoa content chocolate (70% or 85% work best - clearly 70% is sweeter)
1/4 cup coconut milk (liquid part from the can of coconut milk)

Instructions:
1. Over a low heat gently warm the coconut milk and cream in a small saucepan until hot but not simmering.
2. Break the chocolate into small pieces and add to the warm cream, stirring to melt.
3. When smooth and glossy pour into two ramekins and place in refrigerator for 2-3 hours or until set.
4. Garnish as extravagantly or as plainly as time permits with fruits, seeds, coconut, flowers etc.
5. Enjoy with a loved one.
