Super simple. Universally loved by old and young - these never last long around our house!

Raw Apple Pie Energy Bars
Grain-free, Gluten-free, Dairy-free, Refined Sugar-free

Makes approx 16 bars

1 heaped cup (75g) loosely packed unsweetened dried apple
3/4 cup (100g) raw unsalted sunflower seeds
1/2 cup (100g) raw unsalted almonds
scant 1/2 cup (90g) unsweetened pitted soft dates
2 tsp ground cinnamon
1 tsp ground ginger
1 tsp ground nutmeg
big pinch salt  (I use this Himalayan pink salt - use code IMPAL10 for 10% discount)
1 tbsp coconut oil (plus extra if needed)

1. Place almonds and apple in food processor and pulse a few times until roughly chopped.
2. Remove approx 1/4 cup and set aside to add back in later for texture. (Omit this step if you don't like chunks, have small children with choking hazards or are just short on time!)
3. Add sunflower seeds and dates to remaining mixture in food processor and blitz until breadcrumb texture.
4. Add spices and salt. Continue to process until combined.
5. Add coconut oil and process. Mixture should clump together to form a dough when squeezed. Add extra coconut oil or a dribble of coconut milk or water if needed.
6. Remove dough from processor and add back reserved chunky almonds and apple pieces. Mix through.
7. Transfer dough to parchment lined loaf tin or brownie tin. Press firmly and evenly. Alternatively roll mixture into bite-size balls.
8. Refrigerate to set before slicing into bars with  a sharp knife.. Store in airtight container in fridge or freezer.
