Sweet Potato Turkey Indian Spiced Patties

Over the busy summer holidays I have been trying to make meals that:
a) cater to the tastes of all members of the family (quite a tall order given the diversity of strong likes and dislikes;
b) require minimal fussing over a hob in the summer heat;
c) can be served cold straight from the fridge for efficient leftover lunches.

Sweet Potato Turkey Indian Spiced Patties

These little patties do just the job. despite the fragrant Indian spices they are not too spicy for the children (or husband) but flavourful enough to elicit a general consesus of approval. A winner in our household!



Sweet Potato Turkey Indian Spiced Patties
Grain-free, Gluten-free, Dairy-free, refined Sugar-free

Makes approx 10-12


Ingredients:
500g turkey mince (breast, leg or mixed as preferred!)
350g (approx 2 medium) sweet potato, peeled and grated
1 medium egg
1 tbsp garam masala powder
1 tsp garlic powder
1 tsp onion powder
2 tsp sea salt
1 tsp fresh ground black pepper
2 tbsp lemon juice (half a lemon)
small bunch coriander (approx 15g) roughly chopped

Instructions:
1. Preheat oven to 180 degrees celsius (approx 356 degrees farenheit) and line a baking sheet with parchment or lightly grease with coconut oil.
2. In a large mixing bowl combine turkey, sweet potato, garam masala, garlic, onion, salt pepper and egg.
3. Add lemon juice and coriander and mix to combine.
4. Scoop heaped table spoonfuls (or whatever size patty is preferred) onto prepared baking sheet, gently flattening and shaping each patty, and evenly spacing them out. Use two baking sheets if needed.
5. Bake in preheated oven for 25-30mins (smaller patties will take less time), until golden on the edges and cooked through.
6. Serve immediately with a pile of roast vegetables or refrigerate leftovers to serve with a salad for a quick lunch or picnic.
